My Jolly Creamy Potato Salad

My husband is a meat and potatoes man, so it’s no wonder that he enjoys potatoes in most of his dishes. Nothing pleases him more than a hefty serving of potatoes in chicken curry, lengua, tinola, and other foods. My kids have apparently taken after him because they love potatoes too! Whether it’s French fries or chicken salad, they enjoy it all mainly because it  has generous amount of potatoes.

Come to think of it, they’re not alone in their fascination with potatoes. This crop is an important part of the world’s food supply and follows maize, wheat, and rice in popularity. About 5,000 varieties of potatoes exist worldwide, and 3,000 of these are found in Ecuador, Chile, Peru, Bolivia, and Colombia. Its name comes from the Spanish word patata. 

What makes potatoes special? Aside from vitamins and minerals, they contain phytochemicals like carotenoids and natural phenols that are good for the body. However, they are best known for carbohydrates in the form of starch – a part of which reaches the large intestine intact. This is said to have the same health benefits of fiber that protects against colon cancer, lowers blood cholesterol and triglyceride levels, and reduces the storage of fat.  

Knowing this, I made up my own special recipe of potato salad – an old favourite with a twist thanks to Jolly Mayonnaise. Here are the ingredients:  

For the dressing
300 ml Jolly Mayonnaise
1 cup thick cream
2 tbsp fresh chopped mint
1 cup grated cheese

For the salad
1 kg Baguio potatoes
2 large apples
1 can pineapple tidbits

Directions
Mix all the dressing ingredients with a little salt and pepper and 2 tbsp water until well blended.

Halve or thickly slice the potatoes if large and boil for 7-8 minutes in a pan of salted water. Cool under the cold tap.

Pile the potatoes into a bowl followed by the apples and pineapples. Pile on top of the salad and drizzle over the dressing.

Cover the bowl with cling film to transport. Toss just before bringing to the table to mix and coat everything in the mayo dressing. You can store this in the fridge afterwards. 

Honestly, I doubt if there will be leftovers. Jolly Mayonnaise is a thick, creamy mayo that adds flavour to foods and makes your dining experience better. If you want your mealtimes to be special, be sure to include this in your recipes and get ready for a tasty treat!
